The Most Important Meal of the Day


I'm a terrible morning person. On most days of the week, I can honestly say that getting out of bed when my alarm goes off is the most awful part of my day. I can also honestly say that I let the snooze go off approximately 68 times before finally connecting my feet to the floor.

Delaying waking up until the last possible second makes it difficult for me to sneak in enough time for breakfast - the "most important meal of the day." However, I've discovered a few quick fixes that nicely hold me over until lunch that I'm sharing below … let me know in the comments if you have a quick and easy favorite that I can start adding to the rotation!

1. Living in Austin, it's impossible not to be tempted by a breakfast taco. Thankfully, these breakfast quesadillas save me from setting my alarm even earlier and hitting up a taco stand. Two minutes in the microwave and we're out the door. (One downside - two of these come in each box and they're wrapped in the same plastic. I HATE that they're not individually wrapped and eat the next one the following morning to prevent freezer burn.)

2. This is my favorite summer breakfast! Its light, but the protein content makes it very filling. I always throw in a spoonful of my favorite granola from Central Market and a tablespoon of honey to give it some crunch and a sweet flavor.

3. Truly the quickest of my go-to breakfasts. I simply grab one of these on my way out the door, and in about 20-30 minutes it's thawed enough to eat at my desk and enjoy with a cup of coffee. (Can also toss it in the microwave for 10-15 seconds for a quicker thaw.)

4. A friend recently showed me these at Target and I've been hooked ever since. Four per box, and as a bonus, they're individually wrapped! After 75 seconds in the microwave, it's like a turkey sausage patty wrapped in heaven. Highly recommend these.

The breakfast quesadillas, Bagelfuls and Jimmy Dean sandwiches can all be found in the frozen food section at your local grocery store.
